Golden Mashed Potatoes with Fried Onions and Bacon
Ingredients
- 3 1/2 pound(s) large Yukon Gold potatoes, peeled, quartered
- 1/2 pound(s) carrots, peeled, coarsely shredded
- 6 slice(s) smoked bacon
- 1 tablespoon(s) canola oil
- 1 large sweet onion, diced
- 2 teaspoon(s) fresh thyme leaves
- 1/2 cup(s) buttermilk, at room temperature
- 2 tablespoon(s) unsalted butter, softened
- 2 1/2 teaspoon(s) kosher salt
Directions
- In a large saucepan, cover potatoes and carrots with 2 inches of cold water and bring to a boil over high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain on paper towels. Discard all but 2 tablespoons of the bacon drippings from skillet; add oil and onion to drippings and sauté 10 minutes or until softened and lightly browned. Stir in thyme; cook 2 minutes longer.
- When potatoes are fork-tender, drain in a colander and transfer mixture to a large bowl. Add buttermilk, butter, and salt; mash with a potato masher until potatoes are smooth, with small flecks of carrot visible. Stir in onions. Crumble bacon over top.

Spaghetti with Parsley Almond Pesto
- 1 clove garlic
- 1 1/2 cup(s) lightly packed flat-leaf parsley with thick stems removed
- 3/4 teaspoon(s) salt
- 1/3 cup(s) olive oil
- 1/3 cup(s) unsalted blanched almonds
- 3/4 pound(s) spaghetti
- 2 plum tomatoes, chopped
Directions
- In a food processor, puree the garlic and parsley with the salt. With the machine running, add the olive oil in a thin stream. Add the almonds and pulse to chop.
- In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Reserve 1/2 cup of the pasta water. Drain the spaghetti and toss with 1/4 cup of the reserved pasta water, the pesto, and the tomatoes. If the sauce seems too thick, add more of the reserved pasta water.
- Variations: Spaghetti with Parsley Almond Pesto and Parmesan: Stir 1/4 cup grated Parmesan into the parsley pesto after chopping the almonds. Spaghetti with Parsley Pine-Nut Pesto: Use 1/3 cup pine nuts in place of the almonds for a more traditional pesto.
- Wine Recommendation: With the parsley, olive oil, and almonds, a simple, lively white wine is best. Good examples are a pinot grigio from the Alto Adige and a Vernaccia di San Gimignano from Tuscany.
Tips & Techniques
Traditional pesto is an uncooked sauce from Genoa made with basil, garlic, olive oil, grated cheese, and pine nuts. More recently pesto, which literally means "crushed," is being used as a general term to describe many herb-and-nut purees. Feel free to experiment with different herbs, nuts, and grated cheeses, depending on what you like and can get easily.

Fusilli with Creamed Leek and Spinach
Ingredients
- 3/4 pound(s) fusilli
- 1 1/2 tablespoon(s) extra-virgin olive oil
- 1 large leek, white and light green parts only, thinly sliced
- 1 cup(s) heavy cream
- 4 cup(s) packed baby spinach, coarsely chopped
- 1/2 cup(s) lightly packed basil leaves, finely chopped
- Kosher salt and freshly ground pepper
Directions
- In a large pot of boiling salted water, cook the fusilli until al dente, then drain.
- Meanwhile, in a large, deep skillet, heat the olive oil. Add the leek and cook over moderate heat until softened, about 10 minutes. Add the cream and simmer over moderate heat until slightly thickened, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes.
- Add the cooked fusilli to the skillet and toss over moderately low heat until coated with the leek sauce, about 1 minute. Remove from the heat, add the chopped basil, and toss. Season with salt and pepper. Spoon the fusilli into bowls and serve.

Spaghetti Carbonara
Ingredients
- 2 tablespoon(s) olive oil
- 6 ounce(s) pancetta or thick bacon, cut into 1-inch long, thin strips
- 1 small onion, finely chopped
- 1 1/2 pound(s) spaghetti
- 2 tablespoon(s) coarse sea salt
- 2 large egg yolks
- 2 tablespoon(s) chopped parsley
- 1/3 cup(s) grated Pecorino cheese, plus more for garnish
- 1/3 cup(s) heavy cream
- 1/2 teaspoon(s) coarsely ground black pepper
Directions
- Heat olive oil in a large skillet over medium heat. Add pancetta and cook 5 minutes. Add onions and sauté until both onions and pancetta are lightly browned. Remove from heat.
- Meanwhile, cook pasta according to package directions in boiling water with sea salt. While pasta cooks, stir together yolks, parsley, and 1/3 cup of cheese. Return pancetta and onions to medium heat; add cream and pepper and bring to a slow simmer.
- Strain pasta, reserving 1 1/4 cups of pasta water. Blend 1/4 cup of pasta water with yolk mixture, then stir into pancetta cream sauce. Add 1/2 to 3/4 cup more of pasta water and simmer sauce until bubbling and slightly thickened, about 1 minute.
- Return pasta to pot and toss with sauce. If necessary, add more pasta water to make sauce creamy. Serve with additional grated cheese on the side, if desired.
